Pistachio Salad

I am only adding this in case David should ever need to make this and doesn't have anyone around to tell him how. I could make this stuff in my sleep. I personally do not like it, but my husband and family do. What can I do but make it to please?

Pistachio Salad

1 box of pistachio instant pudding mix
1 container of whipped topping
1 can crushed pineapple
1 c. marshmellows
chopped pistachios (optional)

Combine all ingredients together and mix. Chill in refrigerator for at least an hour.

Cinnabon Clone

I was looking for a cinnamon roll recipe and happened upon this one. It looks just like the Cinnabon cinnamon rolls. They are delicious and not one bit fattening-- if you believe that, you will believe anything :)

Cinnamon Rolls

1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour (all-purpose will work as well)
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

The Insides
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

The Frosting
1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

German Pancakes

This is a new favorite of mine. It's a great meal for Sunday morning before church. It looks crazy when it comes out, but it settles soon after. With a little powdered sugar and maple syrup (or the occasional strawberry jam), it is sure to delight.

German Pancakes

6 eggs
1 cup milk
1 cup all-purpose flour
2 tablespoons butter, melted

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan with the melted butter.
  2. Place eggs, milk and flour in a blender and whip until smooth (I just used my mixer and it turned out just fine). Pour into prepared pan.
  3. Bake in preheated oven for 20 minutes, or until golden.

Saltine Toffee

I made this for Christmas last year and it was probably some of the best toffee I have ever had. Yummy!

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans


  1. Preheat oven to 400 degrees F (205 degrees C).
  2. Line cookie sheet with saltine crackers in single layer.
  3. In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  4. Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

Homemade Maple Syrup

I never had store bought syrup when I was growing up and it never bothered me. This is runny when hot, but so delicious (even though my husband doesn't like it). I don't really like Mrs. Butterworth, but I LOVE this syrup. It's easy and cheap.

Homemade Syrup

2 c. granulated sugar
1 c. water
1 cap full imitation (or if you can find actual real maple... maybe from the tree?) maple flavoring

Combine sugar and water in pan. Bring to rapid boil. Remove from heat and add cap full of flavoring and stir. Serve hot or allow to cool. It thickens up when cooled.

Stephanie's French Toast Casserole

I had this at my friend Stephanie's house and it is delicious! It has all the ingredients of breakfast goodness mixed together. Two thumbs up!

French Toast Casserole

8 slices of bread cubed (She suggests 12ish)
1 8 oz of cream cheese
12 eggs beaten
2 cups of milk
1/2 cup maple syrup

Spray pan with Pam. Place 1/2 of the cubed bread in pan. Then sprinkle cubed cream cheese on bread. Put other 1/2 of the bread on top. Mix eggs, milk & syrup together. Pour over bread & cream cheese. Refrigerate over night. Bake @ 375 degrees for 45 minutes. Enjoy!!
