Oatmeal Pumpkin Raisin Cookies

I was feeling like something pumpkin without the pie around Thanksgiving. These cookies hit the spot! They make a ton and they are so delicious. I always boil my raisins for at least five minutes to soften them up. They are not too pumpkin-y. I don't really like the chocolate chip ones, so I thought raisins made them delightful. I got this off of Cooks.com

Oatmeal Pumpkin Raisin Cookies
4 c. all-purpose flour, unsifted
2 c. quick oats, uncooked
2 tsp. baking soda
2 tsp. ground cinnamon
a dash or two of nutmeg
1 tsp. salt
1 1/2 c. butter, softened
2 c. firmly packed brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla extract
1 (15 oz.) can solid pack pumpkin
1 c. raisins

Preheat oven to 350 degrees. Lightly grease pans (I didn't and they came off okay, but it's probably a good idea to give it a shot of non-stick spray). Combine flour, oats, soda, cinnamon, nutmeg, and salt; set aside. Cream butter, gradually add sugars, beating until light and fluffy. Add egg, vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.

Stir in raisins. Bake 20-25 minutes until cookies are firm and lightly browned. Don't place them on top of each other as they tend to stick, but it just ends up being a delicious cookie clump!

Classic Waffles

This is a great recipe I tried tonight (I just love breakfast for dinner). They turned out as good or better than store bought mixes (my husband liked them and he doesn't like waffles, or so I am told). Fabulous! An allrecipes.com recipe with a little bit of a twist.

Classic Waffles
2 cups all-purpose flour (I added about a 1/4 cup more)
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs, separated
1 1/2 cups warm milk
1/3 cup butter, melted
1 1/2teaspoon vanilla extract

DIRECTIONS

  1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
  2. Separate eggs. Beat egg whites until stiff.
  3. In a separate bowl, beat the yokes. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. Fold in egg whites.
  4. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
