Classic Waffles

This is a great recipe I tried tonight (I just love breakfast for dinner). They turned out as good or better than store bought mixes (my husband liked them and he doesn't like waffles, or so I am told). Fabulous! An allrecipes.com recipe with a little bit of a twist.

Classic Waffles
2 cups all-purpose flour (I added about a 1/4 cup more)
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs, separated
1 1/2 cups warm milk
1/3 cup butter, melted
1 1/2teaspoon vanilla extract

DIRECTIONS

  1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
  2. Separate eggs. Beat egg whites until stiff.
  3. In a separate bowl, beat the yokes. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. Fold in egg whites.
  4. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
